How to taste olive oil

A simple tasting begins with curiosity. Smell first, take a small sip and notice how the flavor develops.

You do not need specialist equipment for an informal tasting. Pour a little oil into a small glass, cover it with one hand and gently warm the glass in your palm. Then lift your hand and smell.

Taste a small amount. Notice fruitiness first. A pleasant bitterness may emerge on the tongue, followed by a peppery sensation in the throat. These three are recognized positive characteristics of virgin olive oil.

Compare two oils side by side and use your own words: leafy, ripe, soft, intense or lively. The point is to find what you enjoy, not to guess a producer or a place.
